There is a diverse menu including raw fresh intestines, chire sashimi, and a kimchi platter, and the staff carefully grills the food right in front of you, allowing you to savor the freshness of the ingredients.

Our History
On June 20, 2020, relocated to the current location. Opened in November 2004 in Kyoto, Kiyamachi Sanjo. The previous owner, Chiba, repeatedly experimented with the goal of 'providing the most delicious food in Japan,' and completed the current style of 'employees grilling hormone on a slanted iron plate right in front of customers.'
Former Generation Chiba
The quality of the ingredients is determined by sourcing, and the peak of deliciousness is decided by cooking — Former Generation Chiba believes this and has continued to search for the optimal solution for each cut. Without compromising on the size and cut of the meat, they control the flow of fat and the application of heat using a sloped iron plate for meat juices. By having artisans grill the meat, they have created a system where everyone can encounter the 'best bite.' This philosophy still lives on at the counter in Shibuya.
